Bahama Beach House, Mama Juana and Aqua Ocean Club are the big 3 clubs of the south. You can visit Blue Marlin Ibiza Sky Lounge at Meloneras, they have good sound and good music (and on Sundays international DJs). You can also check Café del Mar at Meloneras.
At Playa de Maspalomas (near the Faro at CC Oasis) are some bars like Bar Strand-Apo-Theke and Snack Bar Surf Burger, which have seats in the sand.
At CC Meloneras are some restaurants near the beach with a great view (like K1 food&loungs).
It really depends on your expectations; the La Costa Cocktail & Bar in Playa del Inglés is really nice. Then we have K1 food&lounge in Meloneras. Both places are not really at the beach, though (but really close to the ocean, so still great views).
There are beach bars along Playa del Inglés (look for Anexo II on Google Maps), all the way to the dunes. You can also rent beach beds there.
At Amadores Beach Club (right next to the beach) they have Balinese beds, a pool, and a restaurant.
Is China White / Pacha still a thing? They had EDM last time I went like 100 years ago. But honestly best night out in the South for me is MamaJuana. It does have regeaton but the vibe and place are fantastic!
